Jamaican Jerk Mix is Tim (the chilli mans) special recipe. It’s a delicious curry mix of authentic Jamaican spices and seasoning to create a warm Caribbean flavour. Use as a marinade, simply rub the coating dry onto meat of your choice, or rub dry mix with a little oil into a seasoned paste it works very well with pork, lamb and chicken. Traditionally the Caribbean meat of choice would be goat meat! (Don’t knock it till you’ve tried it) For fuller flavour leave to marinade 24 hours in the fridge. Simply add salt and sugar to taste.
